THE COLLABORATION
Sofitel Sydney’s Champagne Bar has teamed up with Sydney Rum Distillery, Brix Distillers to create a bespoke Spiced Rum, combining the flavours of Marseille with premium Australian Rum, distilled & aged in Surry Hills.
“The new Marseille Inspired Spiced Rum has been created to reflect the strong cultural connection and partnership between our property, our local Sydney distillers and our sister city of Marseille”, said Jarod Senior, Food and Beverage Operations Manager, Sofitel Sydney Darling Harbour.
“It has notes of caraway seed, rosemary, marjoram and clove all used in cuisine from the South of France, lavender prolific in the hills of Marseille, vanilla bean, and grapefruit zest, grapefruit is well known on the Corsica coast”.
L'ÉVASION DE DANTÈS | DANTÈS ESCAPE
In 1844 a gentleman by the name of Edmond Dantès escaped Chateau d’If, a fortress off the coast of Marseille where he had been imprisoned for 6 years.
Dantès escapes in the night in hope of finding treasure he was told of whilst imprisoned, and his former fiancée Mercedès, The Mistress of Marseille. He swims to a small nearby island, and the following day he swims further out to sea where he is collected by a rum smuggling ship who have thought him to be a shipwreck victim.

THE ILL-FATED PAIR
Renowned for its champagne offering and its constantly evolving cocktail list, Champagne Bar has drawn on the history of Marseille to create a new cocktail – Dantès Escape (pictured above) using Brix X Champagne Bar Marseille Inspired Spiced Rum, grapefruit marmalade, vanilla bean, orange bitters.
“Playing on the story of Edmond Dantès, this new cocktail sits alongside Champagne Bars longstanding and bestselling signature cocktail – The Mistress of Marseille, completing the story of the ill-fated pair”, said Jarod.
