Created in 2019 by former Bars Manager Jarod Senior, The Mistress of Marseille has become the signature cocktail of Sofitel Sydney Darling Harbour — a seductive union of Provence and Sydney, inviting you to begin your love affair with Marseille right here at Champagne Bar.
This captivating creation brings together Archie Rose Signature Dry Gin from Rosebery with the vibrant bitterness of Pampelle Ruby L’Apero, crafted from Corsican grapefruits. St-Germain elderflower, a nod to Parisian elegance, intertwines with herbes de Provence, Pernod Pastis de Marseille, and fragrant G.E. Massenez lavender, evoking the lavender fields of southern France.
