The Mistress of Marseille
Crafted in 2019 by our former Bars Manager, Jarod Senior, Sofitel Sydney Darling Harbour’s Signature Cocktail, The Mistress of Marseille combines flavours of Provence and Sydney, and invites you to start your love affair with Marseille in the heart of Sofitel Sydney Darling Harbour, Champagne Bar.
Archie Rose Signature dry gin distilled in Rosebery, with Pampelle ruby l'apero made from grapefruits from the Corsica Coast, St. Germain elderflower inspired by Paris, with herbs de Provence, Pernod pastis de Marseille, and G.E Massenez lavender from the fields of Marseille.

Dantès Escape
Renowned for its champagne offering and cocktail list, Champagne Bar has drawn on the history of Marseille to create a new cocktail – Dantès Escape using Brix X Champagne Bar Marseille Inspired Spiced Rum, grapefruit marmalade, vanilla bean, and orange bitters.
“Playing on the story of Dante, this new cocktail sits alongside Champagne Bars longstanding and bestselling signature cocktail – The Mistress of Marseille, completing the story of the ill-fated pair,” said Senior.
