Illustrating the essence of luxury, good taste and French elegance, we're proud to announce of the hotel's new signature cocktail, Mistress of Marseille.

Our wellness inspired cocktail offers flavours of pomegranate and pandan, both enriched with antioxidants and vitamins. As well as these two exotic flavours a native infused French vodka offering further antioxidants and health benefits in the form of aniseed myrtle, and lemon myrtle.

Nuit Étoilée - The Starry Night
Unleashing his own artistry, our talented Bars Manager, Jarod marked the occasion with an exciting new signature cocktail called 'Étoilée' translates to 'starry' in French is inspired by one of Van Gogh’s most iconic masterpieces,
"The Starry Night".
“The Starry Night”, which hangs on the walls of the prestigious MoMA Museum in New York, is one of the most recognized paintings in the history of Western culture. It features a sunrise scene with vibrant blues and lavender fields, inspired by Van Gogh’s long stay in Provence, in the south of France (a place where Sofitel Sydney Darling Harbour takes a lot of its culinary cues from).
As a nod to this sunrise, our own Nuit Étoilée cocktail shifts from blue to purple, as our bartender pours it in your glass.
